Sunday Dinner


Growing up Sunday dinners were something I looked forward to the whole week.
Depending on where I was, the dinner would change.
My grandpa C would always make the most amazing chicken strips and fries.
My step-mom A made the most amazing roast.
and My mother S made the most delicious bbq meatloaf.

Sunday dinners always remind me of family.
And now that I have my own little family, 
we have started our own tradition of having a good Sunday dinner.

This week, chicken and rice casserole
another one of those old family favorites that I grew up eating.

1.5 cups instant rice
1 can cream of chicken soup +1.5 cans of water
1 cup uncooked chicken.
Mix all together in dish (you could also add some veggies in here if you want)
Bake at 350 in a casserole dish for 45minutes (or until chicken is done)
With about 10 minutes left, sprinkle shredded cheddar cheese on top and let it melt.

Simple. But one of my favorite meals of all time.

  2. Hey, I totally make pretty much the same chicken and rice recipe for our Sunday dinner (and it's one my mom always made for us growing up, too).
